Spring Fever / Weekend Warrior
If you enjoy a good Negroni, try it’s lighter, springier cousin, Spring Fever…
Eureka! It seems that Spring is happening after all. My yard is filled with shoots and buds and leaves (oh my!). I wanted to celebrate with a cocktail, but since it’s still tooooo early to incorporate any actual Spring ingredients, I just went with refreshing, instead.
Full discretion…I love a Negroni. Love. But with one teeeeeeny, tiny alteration. I like to hit my Negronis with a splash of soda at the end. The Campari and the sweet vermouth are just the tiniest bit too viscous for my taste and the soda (or seltzer, or mineral water) breaks through that ever so slightly.
Why am I yammering on about a Negroni? It was my inspiration for the Spring Fever. I wanted to make something that was a little lighter and slightly less bitter in celebration of Spring. Aperol is PERFECT for this. It is often touted as being comparable to Campari and I find it to be a touch more mellow if you find Campari too bitter for your taste. Paired up with a nice dry vermouth and gin (I used Hendrick’s in this case for the rose and cucumber notes), it’s a great cocktail to serve if you are hosting Easter brunch this weekend…..or if you are just hankering for a drink at any point this weekend.
Cin Cin! – HM
1 ounce Aperol
1 ounce dry vermouth (I used Dolin)
1 ounce Gin (I used Hendricks)
seltzer (or soda or mineral water)
orange twist or wedge
In a glass, combine Aperol, vermouth, and gin. Add plenty of ice, top with seltzer and serve with orange.
